About the author: -

The author is working right now as a professor of Law at the University of Virginia and author of Free speech; A philosophical Enquiry; Playing by the Rules; Profiles; Probabilities and Stereotypes; Thinking like a Lawyer and The Force of Law. He is a fellow of the British Academy and the American Academy of Arts and Sciences. He was the founding editor of the journal Legal Theory.

Compelling Factors: -

         Recent developments give new urgency to questions about evidence. The rise of the internet, the widespread use of social media, the Covid-19 pandemic, the accelerating concern about climate change, the 2020 US presidential election, the assault on the United States Capitol on January 6, 2021, and the Trump Administration generally are the obvious example of the contemporary events in which controversies about facts and the evidence offered to prove them have taken center stage.

The non-traditional notion about evidence: -

         More and more, the use and misuse of evidence has a prominence that would surprise anyone who thinks of evidence as a collection of often-silly lawyers’ rules governing the conduct of trials. But the evidence is not only about trials and not only about law. It is about science it is about history; it is about psychology’ and it is above all, about human rationality.

          No one book can hope to deal with the subject of evidence in its full depth and complexity. But we cannot ignore the increasing importance of questions of evidence in public policy and personal decision-making.

Chapter-wise contents: -

         The entire book is divided into 13 chapters. Chapter-1 is related to facts and evidence and said that however important it is to follow the facts, it is also to recognize that science and the facts can only take us so far. Doing the right thing matters, but getting facts right is the first step.

          Chapter-1 also talks about the idea of evidence and said that evidence is what provides the justification or warrant as philosophers are prone to put it for believing that something is true or false. Pieces of evidence are facts, but they are the facts that lead us to the conclusion that the other facts do or do not exist.

          Chapters-2, 3 & 4 of this book talk about the concept of evidence itself. Chapters- 5, 6, 7 & 8 talk about the testimony in the broad sense while chapters 9, 10 & 11 deal with the world of experts and expertise, concentrating on the ways in which expertise can be used and evaluated. Chapters 12 and 13 deal with topics not so neatly grouped together but connected with what we can learn from contemporary research in cognitive and social psychology. 

Takeaway from this book: -

1.    Horses not Zebra: -

The Horses not Zebra for evidence is that evidence is about inference, and inference is about probability it denotes rational thinking with a person of common prudence while investigating or making a trial of any offence. Recognizing and pursuing the unusual and unexpected is indeed valuable for discovery, creativity, and innovation but it is also often valuable to expect the expected to recognize the probabilities are important, and to rely on them. Absent further information horses, not zebras are the winning bet.

2.    Bayesian approach: -

Under a Bayesian approach, the test of whether some fact is evidence of some other fact, or of some conclusion, is incremental, if the fact increases the likelihood of some conclusion above what it would be without that fact, then the fact is evidence for the conclusion. And if a fact decreases the likelihood of some conclusion, then it is evidence against the conclusion. But if the fact neither increases nor decreases what we believed before—prior probability- then the fact is simply not evidence at all or at least not evidence for or against the conclusion in question although it might be evidence for or against some other conclusion.

Limitations of this book: -

I found points of disagreement. Mr. Schauer takes a more favorable view of the use of statistical evidence in court proceedings than I do. The debate pertains mainly to civil cases in which the plaintiff only has to prove that the “preponderance of the evidence” supports his case (a lower burden than the beyond-a-reasonable doubt standard required in criminal cases). In essence, prove the defendant is 51% likely to be guilty, and you win. But the subject of statistics is relevant in criminal law, too. We know, Mr. Schauer notes, that the vast majority of married women killed in their homes were murdered by their husbands. Is that statistical likelihood admissible as evidence in a murder trial? 

The other very important criticism is that American authors are so clever because finance and economy are inserted in the blood of each and every American because the wider approach regarding evidence and proof is already described by the classical Indian book of Nyaya shastra in this book the proof of the fact can be made either by the result of the incidence or by the cause of the incidence. Dayanand Saraswati in his book Satyarthprakash also enunciated the doctrine of evidence and proof. It means that the notion of this book is not new in my opinion. My rating of the book is four stars.

Why this book is written?

                        The first and foremost question arises here, you can say a million-dollar question is arise here that why this book has written by me? There is no doubt that each and every success is the result of the consolidated efforts of the persons affiliated with you. Even though each and every incident is the result of multi causes but there are four basic reasons for writing this book. these areas below- 

1. To conquer over himself
2. To conquer over English
3. To conquer over propositions and notions of the subject.
4. For making a little contribution to the system

1. To conquer over himself:-

            I was born in a small village Rohini situated in district Kanpur dehat, Uttar Pradesh, India. My family belongs to a lower-middle-class, my father is by profession is a farmer. I grew up in the air and water of green crops, vegetables, very huge fields, gardens, ponds, canals, etc. The spirit of freedom was always within me because I grew up in the lap of nature. The frequency of thoughts and imagination was good within me because the livelihood of farmers is very uncertain in India, and farmers are very good dreamers, agricultural crops mostly depend on the weather. Your dreams can be broken at any time, as a farmer due to natural disasters. Before me, in my village, there were no class II or Class I officers, even there is no Advocate or law graduate in my village. It is very true that you can survive without clothes, the house even without religious faith, but you cannot survive without food at all. It is also true that the farmer is the creator of the food but in spite of this the respect of the society towards formers is nill in India, most of the Indian people think that profession of the farmer is a secondary type, they are ready to give preferences to a fourth class Government employee, but the people of India are not ready to give proper importance to the farmers. As a son of the farmer, it was a big challenge to conquer over himself and insert virtues in his deeds which has been acquired by me as a son of a farmer in the lap of nature. After becoming the judge and serving over 10 years in different capacities, I have got the opportunity to impart training to judicial officers and other duty holders. This part of life encourages me to prepare a future deed and this book is the best example to conquer over himself.

2. To conquer over English:-

               I have already told you that I was born in a rural area of India, The person like me is habitual to surviving with fewer resources. In my, there was primary school conducted by the Government, at that time in the way back 1981 even though there was a primary school in my village but unfortunately, there was no building at all. The classes had been held in the open sky or in the shadow of the tree but in spite of zero infrastructure the teachers were very good, they were trying their level best. The course and teaching of Hindi, math, and arts were very good, but they're no place for English. Students of the school were not able to speak even a single word of English. I was also not able to speak even a single word of English in those days when I was studying in the village primary school. After completion of primary, I have got admission to the Inter college nearby town Sikandra in the sixth standard. The students of the entire village go to the college on foot, even college was very far away from the village, I was also one of them. I remember those days, my parents made me wake up early in the morning because in the morning each and every child contributed to the agriculture field, then after they are able to go to school. But we are very happy in that situation and happily go to school daily. In schooling up to 12th the medium of instruction was Hindi. We can read English like a primary student but are not able to understand the meaning without the help of Hindi translation. After completion of graduation, postgraduation, and law graduation my English was improving day by day, but I am not very fluent and conversant in English. After ten years of my service, I have got the opportunity to impart training to the judicial officers and other stakeholders, this time my mother Institution JTRI give me the opportunity to conquer over English, and finally, this deed is the best example of my journey towards conquering English. But I am still trying to conquer over it.............

3. To conquer over propositions and notions of the subject:-         

         The enactments in this respect are much more complicated because the drafting of the Suits Valuation Act,1887 and Court Fees Act,1870 is very difficult, you cannot understand simply. For the writing of this book, the “Subaltern approach” is being adopted by the Author by which complications could be avoided. It means that very simple terms and sentences are used while describing provisions of the enactments to make it understandable for the readers without consultation with a dictionary. It is well known that provisions of the Suits valuation and Court Fees Act are applicable to the whole of India. It is noteworthy to mention that a particular State for the sake of convenience has made several amendments, hence it is not feasible to cover the amendments of all States of the Country. This Book is dedicated only to the State of Uttar Pradesh as well as Uttrakhand with all recent amendments. It is also pertinent to mention here that this book would deal with the provisions of Suits valuation and Court fees in respect of subordinate Courts as well as Hon’ble High Court of the State of Uttar Pradesh & Uttrakhand.

                  The propositions and notions related to Suits Valuation Act and Court Fees Act have been described in a very easy manner and with simple and practical illustrations. When we entered in legal profession either as a judge or as a lawyer on the civil side the first hurdle is how to make suits valuation and how many court fees have to be paid. As a new entrant, we are not able to get the support of seniors, this book will help you certainly, This book is based on twelve years of practical research, therefore, on my side, this deed is the journey of conquering over propositions and notions of the subject.

4. For making a little contribution to the system:- 

           A very good quote from the unknown scholar is"Common people think that hey; Country what can I take from you, but a wise people think that hey; Country what can I give you" The first part of the quote denotes the power and authority, but the rest part of the quote denotes about the responsibility and duty towards nation or system. each and every person is duty-bound to contribute in his area of interest by which system can work properly. It means a strong and wise person makes a strong wise system and the last strong and wise system makes a strong and wise nation. this deed is a little contribution to the system by which I should discharge my constitutional duties. If a single word of this deed helps you in any manner in your day-to-day working then it will be an obligation upon me. 

Why did other states of India & foreign professionals purchase this book?

            As you know we are living in a global era, in another word we can say we are living in the era of interdependence. I would like to suggest two reasons which say that this type of book should be purchased.

        The first reason, as you know some countries of the word are developed but some are developing. there are Civil litigations are pending in different countries, some countries have legislation regarding Suits valuation and Court Fees but some have but not work properly and some do not have. In the respect of Suits valuation and Court fees, India has very old legislation, for the comparative study or for the purpose of research you can take the help of this book. In India availability of books like this, in this respect is very less in number due to the complexity of the law. So you can take help for research purposes. The professional of other states who are working as a consultant of any MNC in Uttar Pradesh, they can take the help of this book in civil litigations.

            The second reason is we are living in a global village, there are several multinational companies of the other countries working in India, there are several litigations are pending in the court of law you working as legal consultants and helping through law firms. I think this book will certainly help you.

प्रस्तावना -

             आज के इस आधुनिक ज्ञान व अर्थ पर आधारित युग में चारो तरफ दौड़ और प्रतिस्प्रधा है। भारत जैसे विकासशील देश में जनसँख्या के सापेक्ष संसाधनों का टोटा है अर्थात तुलनात्मक रूप में संसाधनों का आभाव है।  सरकार का कोई भी विभाग व कार्यक्षेत्र इस समस्या से अछूता नहीं है , हमारे न्यायालय भी इसी कोटि में आते है , जहाँ मुकदमों का अम्बार है तुलनात्मक रूप से जजों की संख्या कम है। कार्य की अधिकता हमारे शारीरिक व मानसिक स्वास्थ्य को नकारात्मक रूप के प्रभावित करती है। लेखक का यह भी मानना है की निजी क्षेत्र भी इससे अछूता नहीं है। इस समस्या से हम कैसे निजात पाए इसी विषयवस्तु पर यह लेख आधारित है , यद्यपि कि यह मंच विधि की संकल्पनाओं के गंभीर विश्लेषण हेतु समर्पित है , किन्तु यह आलेख इस मंच पर भी सार्थक व सुसंगत प्रतीत होता है। इस लेख की विशेष ख़ासियत यह है कि यह लेख, लेखक के व्यक्तिगत प्रयोग पर आधारित है , जिसके कारण इस आलेख के महत्ता और बढ़ जाती है। 

 चयापचय (Metabolism) क्या है और कैसे काम करता है -

शरीर को स्वस्थ्य रखने मे सबसे बड़ा योगदान  Metabolism  का है। Metabolism  या चयापचय शरीर के कोशिकाओं में रसायनिक प्रतिक्रियाओं का संग्रह होता है। अपनी शारीरिक ऊर्जा को बढ़ाने, जैविक पदार्थों के संश्लेषण (synthesis) के लिए हम जो कुछ भी खाते है, वह सब चयापचय महत्वपूर्ण रासयनिक प्रतिक्रिया द्वारा ऊर्जा और कोशिका के निर्माण कार्य में सहायता करता है। शरीर में पोषक तत्वों, विकास और सुचारू रूप से संचालित करने वाले आवश्यक अणुओं को आसानी से उपलब्ध कराने का कार्य चयापचय अर्थात Metabolism का है. ऊर्जा का निर्माण चयापचय के मुख्य घटकों में से एक है।

             सामान्य शब्दों में हम Metabolism को इस प्रकार से परिभाषित कर सकते है कि Metabolism एक ऐसी रसायनिक और शारीरिक प्रतिक्रिया है जो किसी भी जीव या प्राणी को अपने जीवन को स्वस्थ बनाये रखने में सहायता करती है। यह बुनियादी शारीरिक कार्य जैसे स्वास, पाचन, रक्त परिसंचरण, सेल की वृद्धि और शारीरिक मरम्मत के लिए ऊर्जा की आवश्यकता की पूर्ति कराते है।

           चयापचय एक ऐसा शब्द है जो कोशिकाओं और जीव को जीवित अवस्था में बनाये रखने में शामिल सभी रासायनिक प्रतिक्रियाओं का वर्णन करने के लिए किया जाता है, चयापचय को दो वर्गों में विभाजित किया जा सकता है-

          अपचय: ऊर्जा प्राप्त करने के लिए अणुओं का टूटना अपचय कहलाता है इससे बड़ी मात्रा में ऊर्जा जारी होती है, इसी कारण से अपचयता को विनाशकारी मेटाबोलिज्म के रूप में जाना जाता है। यह शरीर से कार्बनिक पदार्थो को निकालता है।

        एनाबोलिज्म या उपचय : कोशिका के माध्यम से सभी आवश्यक यौगिकों का संश्लेषण उपचय क्रिया के द्वारा होता है। उपचय शरीर में मौजूद ऊर्जा का इस्तेमाल करके कोशिका निर्माण कार्य में सहायता करता है, इसलिए उपचय को रचनात्मक मेटाबोलिज्म के रूप में जाना जाता है।

शरीर का वजन  बढ़ना- 

वजन का बढ़ना एक जटिल प्रक्रिया है। नींद, शारीरिक गतिविधियों, तनाव, आहार, पर्यावरण का प्रभाव, हार्मोन में बदलाव और आनुवंशिक गुण वजन बढ़ने के मुख्य कारण हो सकते है। मेटाबोलिज्म एक प्राकृतिक प्रक्रिया है जो इस तरह की समस्याओं को धीमा कर देती है। "चयापचय वह दर है जिस पर हमारा शरीर पोषण का उपयोग करता है। कई कारक चयापचय (हार्मोन का स्तर, एंजाइम स्राव, पुरानी बीमारी की स्थिति, दवाएं, तनाव, गतिविधि के स्तर और नींद के पैटर्न) को प्रभावित करते हैं. चयापचय की दर सीधे कैलोरी की जरूरतों को प्रभावित करती है और वजन घटाने या वजन बढ़ने को प्रभावित करती है. उम्र बढ़ने के साथ, हर दशक में चयापचय 5 प्रतिशत धीमा हो जाता है." हमारे शरीर का वजन बढ़ने का मुख्य कारण यह है कि हम शारीरिक गतिविधियों के लिए अधिक कैलोरी का उपभोग करते है, यही अतिरिक्त कैलोरी बाद में वसा में बदल जाती है, और शरीर में जमा होते जाती है जिस वजह से मोटापा बढ़ जाता है। हमारे शरीर का वजन स्थिर रहेगा यदि हम जितनी अधिक कैलोरी का सेवन कर रहे है उसे बर्न कर दें या जला दें। कैलोरी को जलाने के लिए हमें अपने भोजन को एक नियमित अन्तराल पर लेना चाहिए साथ ही कम मात्रा में लेना चाहिए। आप कसरत करने की आदत डालकर  अपने शरीर की अधिक कैलोरी को जला सकते है। प्रतिदिन कम से काम आधा घन्टा तेजी से टहलना एक अच्छा व्यायाम है।

Metabolism का शरीर में ठीक रखना-

           सबसे पहले यह जानकारी आवश्यक है कि मेटाबोलिज्म को मांसाहार और शाकाहार दोनों ही तरह के भोजन को ग्रहण करके ठीक रखा जा सकता है। पेड़ पौधे, सूरज की रोशनी से ऊर्जा लेते है जिससे वे क्लोरोफिल, कार्बनिक डाईऑक्साइड और पानी के साथ प्रतिक्रिया करके शर्करा बनाते है और इस प्रक्रिया को प्रकाश संश्लेषण कहा जाता है। अतः जो लोग पौधों को खाते है उन्हें शर्करा की प्राप्ति होती है। शरीर मेटाबोलिज्म के माध्यम से शर्करा को तोड़ता है जिससे ऊर्जा प्राप्त होती है और इस ऊर्जा को शरीर की कोशिका के द्वारा इंधन के रूप में वितरित किया जाता है. मेटाबोलिज्म, शर्करा को तोड़कर शरीर के उतकों (tissues) में संगृहीत करता है और जब जरुरत होती है तो संगृहित ऊर्जा का उपयोग करने का काम करता है। कई हार्मोन ऐसे है जो मेटाबोलिज्म की दशा और दिशा को नियंत्रित करते है। थायरॉयड इस ग्रंथि के द्वारा जारी हार्मोन यह निर्धारित करने में महत्वपूर्ण भूमिका निभाता है कि किसी व्यक्ति के शरीर में मेटाबोलिज्म के रसायनिक प्रतिक्रिया को कितना तेजी से और कितना धीमा करना है। मेटाबोलिज्म एक बहुत ही जटिल रासायनिक प्रक्रिया है जिससे आपको यह पता चलता है कि आपके शरीर में कितनी ऊर्जा प्राप्त होती है।

आवश्यक पोषक तत्वों में मेटाबोलिज्म का कार्य-

खाद्य विभन्न प्रकार के पोषक तत्व प्रदान करते है, जो शरीर की ऊतकों के रखरखाव और मरम्मत के लिए आवश्यक होता है। आहार से ही पानी, खनिज, विटामिन, प्रोटीन, ऑक्सीजन, नाईट्रोजन, फ़ोस्फोरस और लगभग 20 आवश्यक पोषक तत्वों की पूर्ति होती है-
    •  कार्बोहाइड्रेट : खाद्य पदार्थ तीन प्रकार में कार्बोहाइड्रेट प्रदान करता है, स्टार्च, सुगर और फाईबर। जिसमे स्टार्च और फाईबर ऊर्जा के मुख्य स्त्रोत है। शरीर के ऊतक सभी गतिविधियों के लिए ग्लूकोज पर निर्भर करते है। कार्बोहाइड्रेट और शर्करा मेटाबोलिज्म के द्वारा ग्लूकोज का उत्पादन करते है। ज्यादातर लोग कार्बोहाइड्रेट के रूप में अपने आहार के लगभग आधे से अधिक हिस्से का उपभोग करते हैं। यह चावल, रोटी, गेंहू, आलू, पास्ता, मैकरोनी आदि से आता है।
    • प्रोटीन : प्रोटीन हमारे शरीर में मुख्य ऊतक निर्माण करता है। प्रोटीन कोशिका संरचना, हीमोग्लोबिन गठन और शरीर के अन्य कार्यों के लिए सहायक होता है। इस कार्य को सुचारू रूप से संचालित करने में मेटाबोलिज्म सहायता करता है। डीएनए और आरएनए आनुवंशिक सामग्री और ऊर्जा उत्पादन के लिए नाईट्रोजन की आपूर्ति में प्रोटीन महत्वपूर्ण भूमिका निभाता है। प्रोटीन पोषण के लिए आवश्यक है, प्रोटीन से आवश्यक अमीनो एसिड पाया जाता है। आवश्यक एमिनो एसिड में शमिल है- लाइसिन, ट्रीपटोफान, मेथिओनिन, ल्यूसिन, इसोल्यूसिन, फिनाइलालानिन, वलिन, थ्रेओनिन। सबसे ज्यादा मात्रा में प्रोटीन अंडे, दूध, सोयाबीन, मांस, सब्जियां और अनाज से प्राप्त होता है।
    • फैट : वसा ऊर्जा के मुख्य स्त्रोत है, यह कार्बोहाइड्रेट और प्रोटीन से दुगुना ऊर्जा उत्पन्न करते है। वसा शरीर में सेलुलर संरचना बनाने में मदद करते है, और शरीर के महत्वपूर्ण अंगों के आस पास एक सुरक्षात्मक घेरा बनाते है. वसा ऊर्जा के लिए एक आरक्षित भंडारण प्रदान करते है। आवश्यक फैटी एसिड है- लिनोलीनिक और अरचिडोनिक।
    • खनिज: खाद्य पदार्थों में खनिज सीधे ऊर्जा की आपूर्ति में काम नहीं करते है, लेकिन शरीर के लिए यह महत्वपूर्ण है. यह शरीर के मेटाबोलिज्म मार्ग में महत्वपूर्ण भूमिका निभाते है. मानव शरीर में 50 से अधिक तत्व पाए जाते है, जिनमे से 25 तत्वों को आवश्यक पाया गया है। महत्वपूर्ण खनिजों में शामिल है- कैल्शियम, फोस्फोरस, सोडियम, पोटैशियम, आयरन, क्लोराइड इओंस, कॉपर, कोबाल्ट, मैंगनीज, जिंक, मैग्नीशियम, जिंक, फ्लौरिन और आयोडीन।
    • विटामिन : विटामिन आवश्यक कार्बनिक यौगिक है, जिसके बिना मानव शरीर स्वयं को संश्लेषित नहीं कर सकता, इसलिए ये सारे विटामिन हमारे आहार में आवश्यक रूप से मौजूद होने चाहिए।
मेटाबोलिज्म के रासायनिक प्रतिक्रियाओं को मेटाबोलिज्म मार्ग में व्यवस्थित किया जाता है ये एंजाइम को उनके क्रम से रासायनिक श्रृंखला के माध्यम से कुशलतापूर्वक कोशिकाओं में आगे बढ़ने देते है। एंजाइम मेटाबोलिज्म के लिए महत्वपूर्ण है। मेटाबोलिज्म पोषण और पोषक तत्वों की उपलब्धता के साथ निकटता से जुड़ा हुआ है। बायोएनेर्गेटिक्स एक ऐसा शब्द है जो जैव रासायनिक या मेटाबोलिज्म मार्गों का वर्णन करता है जिसके द्वारा सेल अंततः ऊर्जा प्राप्त करते हैं. मेटाबोलिज्म की वजह से ऊर्जा विभिन्न भागों में बटकर प्रोटीन, न्यूक्लिक एसिड इत्यादि को शरीर में संश्लेषित करती है।
जब आप युवा होते हैं तो मासंपेशियों में ऊर्जा का संचय हो जाता है जो आपका वजन बढ़ने से रोकता है, लेकिन जैसे ही आप 30 की उम्र पार कर लेते है, मेटाबोलिज्‍म कम होने लगता है और शरीर में वजन बढ़ने लगता है।

स्वस्थ आहार क्या है और कैसे खाएँ?

स्वस्थ आहार लेना सभी चाहते हैं, पर पता नहीं होता कि कौन सी खाने पीने कि चीज़े हमारे लिए जरुरी हैं । हम बस इतना ही जानते हैं कि oil, Ghee, butter, sugar etc. हमारे लिए हानिकारक हैं पर ऐसा नहीं हैं .सभी चीजों की एक सीमित मात्रा हमारे लिए जरुरी हैं ।

पालक, टमाटर,गाजर , लोकी, मिक्स वेजीटेबल यह सभी सूप आपके लिए उपयोगी हैं ।

हरी पत्तेदार सब्जियां , पत्तागोभी, कद्दू, लोकी, ककड़ी (cucumber),टमाटर, गाजर ,करेला भिन्डी, फूलगोभी, शिमला मिर्ची, फल्लिया (beans), गिलकी .

    • Grains (अनाज) :

गेहूं , दलिया, रवा, कुरमुरा,जों .

    • दाले (pulses):

खड़ा मूंग ,  सोयाबीन,राजमा , green and yellow मूंग दाल .

    • Milk/Milk Product (दूध के सामान):दही(curd without cream), skimmed milk (दूध को उबालने के बाद उसे फ्रीज़ में रखे दुसरे दिन सुबह उसकी मलाई हटाकर या उसे छान कर उपयोग करे), छाछ.

Sugar (शक्कर): शक्कर की मात्रा कम से कम ही रखे, दिन भर में 1 tsp शक्कर ही की जरूरत हमारे शरीर को होती है, इतनी ही लें। इससे ज्यादा लेने से ये फैट में बदलने लगती है। यदि हम सफेद चीनी के स्थान पर गुड़ का प्रयोग करें तो बेहतर होता है। ग्रीन टी मे चीनी की जगह शहद का प्रयोग अत्यन्त लाभदायी होता है।

Water (पानी):

12 to 15 गिलास पानी ले। बहुत अधिक ठंडा पानी ना लें , और पानी की अधिकतम मात्रा दिन के समय यानि शाम 7 के पहले ही लें। इसके बाद 1-2 गिलास से ज्यादा न पियें।

oil (तेल): एक दिन में 2 से 3 tsp तेल शरीर  के लिए पर्याप्त हैं ।

Fruits(फल):

रोज 2 से 3 फल जरुर ले . यह आपके भोजन के आवश्यक तत्व आपके शरीर तक पहुँचाने में सहायक होते हैं ।सेव, पपिता, संतरा, मौसंबी, तरबूज , आडू, अमरूद, बेर (plum), लीची (lichi) यह सभी फल सेहत के लिए अच्छे हैं । लेकिन आम (mango) , अंगूर, चीकू, एवं केला मे सुगार और कार्ब की मात्रा अत्यधिक होती है इसलिये या तो  ना ले या बहुत कम मात्रा मे ही लें।

उपवास(fast):-

उपवास का हिन्दू रीती रिवाज में एक अहम हिस्सा हैं। वैसे हफ्ते में एक दिन कुछ न खाना फायदेमंद होता हैं, जिसके लिए उपवास एक अच्छा  मार्ग हैं। पर अगर आप इस एक दिन भूखा नहीं रह सकते, तो साबूदाना और आलू जैसी चीजे खाकर अपने स्वास्थ को ना ख़राब करे। उपवास के नाम पर आजकल अधिक घी, तेल, वसायुक्त खाना खाया जाता है, जो कि शरीर के लिए नुकसानदेह है। पूरा दिन भूखा रहकर एक बार में इतना हैवी खाना बहुत सी परेशानियों की वजह बन जाता है। उपवास के दिन आप skimmed milk,दही , लस्सी, एवम छाछ ले और इसके अलावा फल, जूस, नारियल पानी, सूप भी बना के ले सकते है। इसके अलावा आप खाने में राजगीरा, मोरधन, मखाना भी ले सकते हैं। हाँ लेकिन उपवास के दिन भूखे न रहें, कुछ न कुछ खाते रहें।

इस तरह के खाने को बिलकुल न खाएं (Foods to be avoided for healthy diet):

1. डीप फ्राई(deep fried) : पूरी, भजिया, पराठे, आचार, कचोरी, समोसा, पापड़

2. जैम, केक, मिठाइयाँ, पेस्ट्री, पुडिंग, आइसक्रीम, कस्टर्ड, खीर

3. सब्जी (vegetables): आलू, अरबी, सुरन, गराडू

4. बटर, चीज, म्योनीस (mayonnaise)

5. अत्याधिक मात्रा में ड्राई फ्रूट नारियल, नट्स का सेवन न करें. एक सिमित मात्रा में इन्हें खाया जा सकता है.

6. सॉफ्ट ड्रिंक, सोडा, कैन जूस

8. नूडल्स, पिज़्ज़ा, बर्गर, पास्ता, मक्रोनी, साबूदाना, चावल

9. preserved food

10. Full cream Milk

ध्यान रखने योग्य बाते :-

    • सुबह का नाश्ता (Breakfast) जरुरी है, इसे कभी भी मिस ना करे ।

    • ब्रेकफास्ट, लंच और डिनर के बीच ज्यादा लम्बा गैप ना दे । अधिक समय भूखा रहने से BMR (body का Metabolism Rate कम होता है जिससे वजन एवम फैट बढ़ता हैं)

    • खाने को एन्जॉय करके खाएं । टीवी देखते हुए, मोबाइल या लैपटॉप चलाते हुए बिलकुल ना खाये ।

    • धीरे धीरे एवम चबा चबा कर ही खाना खाये ।

    • भोजन के बीच में पानी ना ले ।

    •  दो या ती से ज्यादा चाय/काफी ना ले । हो सके तो बलैक टी/ ब्लैक काफी/ ग्रीन टी लें, लेकिन ज्यादा नहीं लें और सबसे जरूरी बात यह है कि इसमे चीनी बिल्कुल भी न लें। गर्म चीनी से मोटापा बहुत तेजी से बढ़ता है और सुगर की बीमारी की सम्भावना बढ़ जाती है। मीठे के लिये शुद्ध शहद का प्रयोग करना अत्यन्त लाभदायी होता है।

Metabolism बढ़ाने और खुद को स्वस्थ रखने के उपाय और आहार -

- वजन घटाने और समग्र फिटनेस के लिए व्यायाम बहुत जरूरी है। यह आपके Metabolism को बढ़ाने और दिनभर  Metabolism rateको ठीक रखने रखने के लिये आवश्यक है। दिन का आरम्भ  व्यायाम व प्राणायाम से करना आपको सदैव के लिये निरोगी रखेगा।
- बहुत लंबे समय तक बैठे रहना कई स्वास्थ्य मुद्दों से भी जुड़ा है। यह आपके द्वारा जलाई जाने वाली कैलोरी की संख्या को भी कम कर सकता है और साथ ही साथ रीढ़ के लिये भी घातक है इस लिये थोड़े देर मे खड़े होकर टहलना या खडे रहकर काम करना लाभदायी होता है। कुर्सी पर बैठने का सबसे अच्छा और लाभकारी तरिका यह है कि आप कुर्सी के tip पर बैठें और रीढ़ को बिल्कुल सीधा रखें इससे आपको कमर दर्द कभी न होगा और साथ ही आपका BMR भी ठीक रहेगा।
- बेहतर स्वास्थ्य के लिए उचित नींद भी जरूरी है। आप कम कैलोरी जलाते हैं, जब आप नींद पूरी नहीं करते. क्योंकि यह शुगर को प्रभावित कर भूख को बढ़ाने का काम कर सकता है।
- आप आहार में अधिक प्रोटीन जोड़ सकते हैं और यह आपको अधिक कैलोरी जलाने में मदद करेगा । यह Metabolism को बढ़ाता है और वजन कम करने मे सबसे बड़ा योगदान प्रोटिन का है। बशर्ते कि आपको किडनी की कोई बीमारी न हो। 
- खूब पानी पिएं। यह आपको वजन कम करने में मदद कर सकता है और आपको इसे बनाए रखने में भी मदद मिलेगी। यह आपके Metabolism को बढ़ाता है। भोजन से पहले पानी पीने से भी आपको पेट भरा हुआ महसूस होता है जिससे आप खाना कम खाते हैं।
- बहुत तेजी से डाइट न करें आप अपने खाने की प्रक्रिया में सुधार करें, लेकिन खाने में कटौती एकदम से न करें, वरना आपको कमजोरी आ सकती है। इसके लिए बेहतर है कि आप सही तरीके से प्‍लान करके खाने में सुधार लाएं।
- सुबह का नाश्‍ता, स्‍वास्‍थ्‍यवर्धक करें दिन की शुरूआत भूखे रहकर न करें। खाने से ध्‍यान केन्द्रित होता है और आपका मूड भी अच्‍छा बनता है।
- जिंक का सेवन करें जिंक, आपकी भूख को कम करता है और शरीर में लेप्टिन की मात्रा को कम करता है, जो एक प्रकार का हारमोन होता है जो आपको असुरक्षा की भावना देता है। जिंक, फलों, हरी सब्जियों और कद्दू के बीजों में पर्याप्‍त मात्रा में पाया जाता है। इसके लिए आप  पालक,  मशरूम, अनार, खजूर और वंदगोभी, व ब्रोकली भी खा सकते हैं।
- कैपीसीन एक ऐसा कैमिकल है जो शिमला मिर्च में पाया जाता है, इसकी शरीर में पर्याप्‍तता होने पर खाने के बाद कई घंटों के लिए आपकी ऊर्जा सेव रहती है और आपको वसा को कम करने में मदद मिलती है।
- आप भले ही दिन में कम खाएं, लेकिन जितना भी खाएं, वह अच्‍छा और पोषक तत्‍वों से भरपूर होना चाहिए।

7 दिनों की वेजीटेरियन डाइट स्ट्रेटजी:- 

कभी भोजन करना न छोडें, हर पहर का भोजन करें। हर दो घंटे पर कुछ हल्का सा खाते रहें। फैट, सुगर और कार्ब को लेने की मात्रा कम कर दें। सोडा और रिफाइंड सुगर का सेवन बिलकुल बंद कर दें। पर्याप्त पानी पिएं। वेजीटेरियन के लिए 21 दिनों का डाइट चार्ट- 
1 दिन – प्रातः नीद से उठने के बाद एक गिलास गुनगुने पानी मे थोडा सा नीबू व शहद मिलाकर पिएं। बेड टी के स्थान पर ब्लैक टी/ब्लैक काफी/ग्रीन टी पी सकते हैं।
- तेजी से कम से कम आधा घन्टा टहलना है। टहलने के समय ध्यान शरीर पर होना चाहिये, किसी से बात न करें और फोन का प्रयोग बात करने के लिये न करें।
सुबह: मिश्रित बीज के 3-4 चम्मच या अपनी पसंद के बीज (तरबूज, फ्लेक्स, तिल, आदि) ब्रेकफास्टन: अलसी और ओट्स के साथ एक केला + अपनी पसंद का जूस 
मिड-मॉर्निंग: 1 कप तरबूज + टेंडर नारियल 
लंच: 1 कटोरी दाल के साथ आधा कटोरी ब्राउन या रेड राइस, खीरा,गाजर और टमाटर का सलाद एवं छाछ 
लंच के बाद स्नैक: 1 कप ग्रीन टी + 1 मल्टीग्रेन ब्रेड ।
शाम के समाय धीमी गति से टहलना अत्यन्त लाभदायी होगा।
डिनर: 2 मल्टीग्रेन पतली रोटियां + सलाद + एक कप लो फैट दही 
लाभ: अलसी जिन्हें फ्लैक्स सीड भी कहा जाता है, वो फैट कम करने में सबसे अधिक सहायक होते हैं और शरीर की सूजन भी कम करते हैं। साथ ही तरबूज आपकी भूख को शांत करता है और शरीर को ऊर्जा देता है। छाछ में फैट कम और ऊर्जा ज्यादा होती है। इसलिए इन सभी का सेवन करने से कमजोरी नहीं होती है और फैट भी कम होता है।
डिनर का समय कभी भी 9 बजे के बाद का नही होना चाहिये। डिनर के बाद टहलना अच्छा होगा पर ध्यन रहे कि टहलने की गति धीमी हो़।टहलने के बाद  skimmed milk गुड़ के साथ ले सकते हैं।10 बजे तक सो जाना चाहिये।

लंच: 1 कटोरी रेड या ब्राउन राइस + एक कटोरी मिक्स सब्जी + दही 
लंच के बाद स्नैक: दो कप नारियल पानी 
डिनर: सब्जी वाला पुलाव + रायता + सलाद (अगर आप चाहें) 
लाभ: संतरा, विटामिन सी का सबसे अच्छा स्त्रोत होता है। वहीं लाइम यानि नींबू और शहद वसा को कम करने के लिए बहुत लाभप्रद माने जाते हैं। इन्हें गर्म पानी में मिलाकर पीने से लाभ होता है। ब्राउन राइस की सीमित मात्रा खाने से फैट कंट्रोल में रहता है। नारियल पानी पीने से बॉडी को एनर्जी मिलती है और भूख भी शांत हो जाती है।

मिड-मॉर्निंग: 1 कप चाय + 2 मल्टी ग्रेन बिस्कट 
लंच: गेंहू की एक पतली रोटी + उबली हुई चाट (राजमा, चना, हरी मूंग आदि) + छाछ
लंच के बाद स्नैक: 10 रोस्टेड पिस्ता + 1 कप फ्रेश संतरे का जूस 
डिनर: एक कटोरा फल + सलाद + दो पतली रोटी + एक कप पालक 
लाभ: करेला, शरीर के टॉक्सिन को दूर कर देता है और रक्त को साफ करता है। इसे खाली पेट पीने से बहुत अधिक लाभ होता है। उबली हुई बीन्स को खाने से शरीर में प्रोटीन और कार्ब्स की मात्रा पहुँचती है।
डिनर का समय कभी भी 9 बजे के बाद का नही होना चाहिये। डिनर के बाद टहलना अच्छा होगा पर ध्यन रहे कि टहलने की गति धीमी हो़।टहलने के बाद  skimmed milk गुड़ के साथ ले सकते हैं। 10 बजे तक सो जाना चाहिये।

लंच: उबली बीन्सी + बेबी पालक + गाजर + खीरा + चुकंदर और कम फैट वाला योगर्ट 
लंच के बाद स्नैक: एक कप उबला स्प्राजट भेल + नारियल पानी 
डिनर: एक कटोरा उबला दलिया या उपमा + एक कटोरी सांबर + एक कटोरा सलाद
लाभ: मेंथी के दाने का सेवन करने से शरीर की गंदगी बाहर निकल जाती है। अनानास को खाने से शरीर को ऊर्जा मिलती है और वसा कम होता है। इसके सेवन से पेट का मोटापा यानि बैली फैट घट जाता है। स्प्राउट, पाचन को अच्छा बनाता है और नारियल पानी शरीर को स्फुर्ति और ताजगी प्रदान करता है।

मिड-मॉर्निंग: 1 कप ग्रीन टी + एप्पल 
लंच: पालक ब्राउन राइस + कद्दू + बंगाल ग्राम करी + 1 कप बटरमिल्क
लंच के बाद स्नैक: 1 कप खरबूजा + सेब 
डिनर: 2 गेंहू की पतली रोटी + पनीर भुर्जी + सलाद + दही 
लाभ: चुकंदर का जूस, शरीर में रक्त की मात्रा को बढ़ाता है। ये पाचन में अत्यधिक सहायक होता है और कार्बोहाईड्रेट की मात्रा को भी संतुलित रखता है। ग्रीन जूस में बहुत सारे पोषक तत्व होते हैं। ये पेट को ठंडक प्रदान करता है। सेब भूख को शांत करता है।
डिनर का समय कभी भी 9 बजे के बाद का नही होना चाहिये। डिनर के बाद टहलना अच्छा होगा पर ध्यन रहे कि टहलने की गति धीमी हो़।टहलने के बाद  skimmed milk गुड़ के साथ ले सकते हैं। 10 बजे तक सो जाना चाहिये।

मिड-मॉर्निंग: 3-4 सूखी मेवा + टेंडर कोकोनट 
लंच: ताजा दही के साथ लेमन चिली राइस वेज बिरयानी ।
लंच के बाद स्नैक: आपकी पसंद का 1 फल और ग्रीन टी या नारियल का पानी
डिनर: 2 मल्टीग्रेन रोटियां, ताजा दही, सलाद, एक हरी सब्जी की करी
लाभ: नींबू और तरबूज के जूस को पीने से फैट कम होता है। वहीं पुदीना शरीर को ठंडक प्रदान करता है। इडली को सबसे अच्छा ब्रेकफास्ट माना जाता है। अंगूर का जूस, शरीर को डिटॉक्सीफाई करता है और फैट कटर होता है। गाजर, आयरन और विटामिन का अच्छा स्त्रोत होता है जो आंखों की दृष्टि को मजबूत और वजन घटाने में सहायक होता है।

मिड-मॉर्निंग: 1 केला + ½ कप अंगूर
लंच: मिश्रित सब्जियों के साथ चावल मैकरोनी + पालक और सेब का रस (3 सेब, मोटे तौर पर कटा हुआ पालक 2 कप, ½ नींबू, ½ कप रेड लेट्टस पत्ते, एक चुटकी काली मिर्च, थोडा नमक) लंच के बाद स्नैक: आपकी पसंद का 1 फल और ग्रीन टी या नारियल का पानी 
डिनर: ब्राउन राइस + चना करी + फ्रेंच सेम सब्जी + दही
 लाभ: सेब का सिरका, वजन घटाने में सहायता करता है। पैनकेक को खाने से पेट भर जाता है और ताकत मिलती है, आप इसे चीट मील भी कह सकते हैं। काली मिर्च के सेवन से बेली फैट घटता है। फ्रैंच बीन्स प्रोटीन का अच्छा स्रोत होती है। आपको इस डाइट को आप अपने अनुसार परिवर्तित कर सकते हैं । ध्यान रखना है कि ऐसी चीजें  शामिल न करें जो ज्यादा सुगर व फेैटयुक्त हो।
